The only diff between Richter and Simon is that Richter's Holy Water does Aura damage while Simon's does fire damage. This means that Richter'z holy water can be boosted by an aura attack up spirit.

If at kill %, press neutral b twice then side b and repeat to keep enemies at a good distance. Hail on people with dair twice then use any one of your aerials, depending on where the enemy is

If you have your opponent in the air, try and throw an axe (neutral-b) to force the air dodge and follow up with an up-air; this can kill at low %s if the opponent is high enough in the air.

Use neutral B when opponent off stage, Down B when opponent is reaching the ledge and use side B (best projectile) to combo or to get opponents away from you

Choose one stage of the stage and make a "wall" using down-b, following up with side-b if opponent is in front or neutral-b if opponent is in the air. Can follow up with the same combo or some tilts.
