Keep Ganon at a distance, make him want to come to you. Use moves like ftilt and dtilt to keep him at bay. Knock Ganon out of up b, neutral b or jumping off stage and using aerials is good for this.

You can add in throwing out down B. He's got a large hitbox so the sweetspot is easier to land.
